Instead of kicking myself for "not reading enough," I've found a better solution: books on cd! I'm in the car a lot for my job - about 6+ hours per week. I have started renting books on cd from the awesome local library and am really enjoying it! In the past month or so, I've listened to: "The Testament" by John Grisham, "Love the One You're With" by Emily Giffin, "The Physick Book of Deliverance Dane," by Katherine Howe, "The Client" by John Grisham, and "The Mermaid Chair" by Sue Monk Kidd. I don't feel like such a slacker anymore!

Pine Bark / White-Trash Toffee

My tennis partner, Rushton, made this for me once and I was HOOKED. It is so delicious. Every time I asked for the recipe she said, "Oh, it's so easy. Whenever you want some, just ask!" She was resisting. She wanted to keep this delicious recipe all to herself!! I shared the 5th batch she made me with my parents and MY MOM said, "I saw Paula Deen make this on tv!" She found me the recipe. At last!

Ingredients:
40 Saltine Crackers
1 cup light brown sugar
1 cup unsalted butter
12 oz semi-sweet chocolate chips
1/4 cup chopped nuts (optional)

Directions:
Preheat oven to 400. Place saltines salt-side-up on a baking sheet, with their edges touching. In a saucepan, bring the butter and and brown sugar to a boil and cook for about 3 mins. Pour the bubbly sugar mixture evenly over the crackers and put the baking sheet into the oven. Bake for 3 more minutes. Sprinkle with chocolate chips and put back into the oven for 1 more minute. Remove from oven. Using a spatula, spread the chocolate evenly over the crackers and sprinkle with the (optional) nuts. Allow to cool. Place baking sheet in the freezer for about 1 hr until set. Once hard, remove and break into "rustic" pieces.

Buttermilk Pie Recipe

Before I throw the recipe away, I thought I would immortalize it on here (also because it took my mom an hour to find it, stuffed between all the pages of her hundreds of cookbooks).

INGREDIENTS:
One 9" no-bake pie shell (I bought shortbread)
2 cups (minus 2 tbs) sugar
1/2 tsp salt
1/4 cup all-purpose flour
1 stick of melted butter
3 eggs, beaten
1 tsp vanilla extract
1/2 cup buttermilk

Mix all ingredients together and pour into shell. Bake at 350 degrees for 45 minutes (should see cracks when its cooked). {Mine didn't crack, but it was still cooked and delicious}.

My sweet son received the Sacrament of Baptism yesterday (3/8/09)....and what a day it was! Our priest allowed us to baptize during Lent (and that was very nice of him). So John and Saxman were baptized at the 10am service yesterday and it was so meaningful.

It is such a wonderful "responsibility" to be blessed with a child. I still look at him every day and think "is he really mine? do you really think he looks like me (which some people REALLY think and others think he is the spitting image of David {I'm one of them}").

I grew up in the Episcopalian church and am so happy to have met - and married - a man who shares my same beliefs....and subsequently to create a child that can grow up in the Episcopalian faith {pause: since I am what they call a "cradle Episcopalian," I have decided to participate in the Inquirers Class at church to learn more about my denomination} I think it will be an eye-opener!

Our sweet son was born at 7:58am on Friday, January 23. It was a GLORIOUS day!! He was 8 lbs, 10 oz and was 21" long. First I heard him cry, then David brought him to me. It was the most amazing moment ever. Here is our first photo as a family of 3. We're loving every moment of parenthood. What a blessing. You can see the complete set of photos here!!

We found out last week that the baby is breech (he is already stubborn like his parents)! The doctor said with his size (an estimated 9lbs), it would be wise to do a c-section. So here I am, at 4:10am on the morning of (we have to be at the hospital at 5am). I'm trying to "keep it cool," but I'm nervous, excited, thirsty, happy, fearful, etc. So many emotions...so little time to even TRY to put it to words. Most of all, I feel blessed. Just praying for a healthy child and a routine surgery. I can't wait to meet you, baby!

Marta's Peanut Butter Cookie Recipe

Look at how beautiful Marta's chocolate-dipped peanut butter cookies are!! She was nice enough to email me her recipe: "i simply made the classic toll-house chocolate chip recipe and omitted the chips, used a cup of peanut butter and only 1 and 1/2 sticks of butter. it worked beautifully. i also added a little more flour and then refrigerated the dough for a few hours to mingle all the flavors and help set the dough up nicely. then i rolled the dough into balls and baked as usual. i hope this works for you. happy baking..xo. marta" I'm going to try making them SOON!!!

So, translated:
2.5 c all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup peanut butter
1.5 cups softened butter
3/4 cups granulated sugar
3/4 cups packed brown sugar
1 tsp vanilla extract
2 large eggs
Also chocolate, for dipping!

Refrigerate and then roll into balls. Bake at 375 for 9-11 minutes.

WHO KNEW it was strawberry (lovingly referred to as "skrawberries" in our home) season in Central Florida? On a recent road trip, my sweet hubby picked up a flat of these beautiful berries (as well as MY FAVORITE, boiled peanuts) at a farmstand. I have never seen such beautiful berries...they're perfect!

Although I'm tempted to create something sweet and gooey out of them, I think I'll just leave them alone. Let them shine in their own, perfectly ripened glory.

Here's an article that discusses the theory about women going into labor on or around a full moon. Tonight is supposed to be the biggest-appearing full moon in 2009. Which begs me to ask, "will we see any baby action tonight?" My gut tells me no, not for another 12+ days (which isn't very long when you think about it)...yikes! But since this is my first time expecting a child, what do I know? Guess we'll have to see!

...Some Reflecting on 2008

No question about it - 2008 was a really great year for me (us). It seems a little RUDE to let the year slip by without taking at least a few moments to reflect on the past 365 days.

One of the most obvious FANTASTIC things about 2008 is that we found out "we are pregnant" (I really do cringe when I write that b/c I think its a silly way of putting it, but it's pretty straight-forward), and that Jonathan David will be here sooner than we know it (or can believe it)! And then, not a week later, David found out he made partner at the law firm. This is a HUGE accomplishment, and something I know he really wanted. I'm still very proud of him. We went on 2 BIG vacations - an anniversary trip to Maine to January (we wanted to frolic in the snow), and a "Babymoon" to California over Halloween. THAT was the best trip EVER! We took a cooking class at the Culinary Institute of America (Napa Campus), met Chef John Ash, went hiking in Pt. Reyes National Park, ate at the French Laundry, and toured San Fransisco. I turned 28 years old, and David organized a bowling birthday party (complete with my favorite, red velvet, birthday cake). David finished his 10th marathon total (this year, he ran in the Donna Hicken Breast Cancer Marathon in February and the Jacksonville Bank Marathon in December)...not to mention several half-marathons and 15ks too! I played a good amount of tennis and improved my singles ranking to 4.0 - very exciting!

I hope 2009 has as many wonderful things in store for us. So far, so good! I'm grateful for all the wonderful gifts - our life, our health, and our family. And hope the oncoming year is full of the same for you!

My friend, Kristen, always has such great ideas. She just lent me a TON of little boy outfits that her son, Meyer, wore when he was little. I'm am grateful and thrilled when people loan me things, but I usually panic because I'm afraid I won't remember who loaned me what, etc. Well, Kristen has these iron-on stickers on the back of all her outfits that say her son's name. So it's EASY for me to know what goes back to Kristen. I LOVE that idea! Thanks, Kristen, for all the awesome clothes!

David completes his 10th marathon!

David has officially completed the "Tri-2-B-Fit Challenge!" He ran the Marine Corps 1/2 Marathon in October, the Outback 1/2 Marathon on Thanksgiving, and (just recently) the Jacksonville Marathon last weekend. That's over 53 miles (and doesn't include all the training and long-runs in the interim)! I am SOOOO PROUD. This was David's 10th Marathon. Oh - and I can't forget to mention that he finished in his best time YET (4:07)! He says he's taking a little "hiatus" once the baby comes, but I'll believe it when I see it. I have ALWAYS wanted to complete ONE marathon. Maybe it will be a 2009 goal? Probably not; I just really really am in awe of people who can do it.

Mrs. Meyers Cleaning Products, Baby Blossom

34 Weeks

I get email updates from babycenter every week. This week, it says: "Your baby now weighs about 4 3/4 pounds (like your average cantaloupe) and is almost 18 inches long. Her fat layers — which she'll need to regulate her body temperature once she's born — are filling her out, making her rounder. Her skin is also smoother than ever. Her central nervous system is maturing and her lungs are continuing to mature as well. If you've been nervous about preterm labor, you'll be happy to know that babies born between 34 and 37 weeks who have no other health problems generally do fine. They may need a short stay in the neonatal nursery and may have a few short-term health issues, but in the long run, they usually do as well as full-term babies."

And what I have to report is: Getting bigger every week, but enjoying every little twitch, kick, and stretch he makes (which is usually located on my right side). My belly feels big, and I constantly feel "full," even if I haven't eaten in a while. Since we don't have any full-length mirrors in the house, I'm always surprised when I see my belly in a store-window or when I'm out. I DEFINITELY look like a pregnant lady. Strangers are asking about my due date, and EVERYBODY has something to say about their L&D or their children. Some people say that I'm "small" for this far along, and others say "you'll have him before your due date." It's funny.

Gagnon Granola, Christmas 2008

...and we have a winning recipe! It is actually a mixture of many recipes I tried. But we are in the process of delivering these little bundles to our neighborhood friends and I am SO pleased with how they turned out. I bought personalized stickers from Swoozies that say "Merry Christmas! From, the Gagnons" and dressed them up!

Ingredients:
6 cups old-fashioned oats
2 cups raw nuts (I used pecans, pistachios, slivered almonds, sunflower seeds)
2 cups dried fruit (I used dried cranberries and raisens)
1 cup shredded, sweetened coconut
1 cup maple syrup (grade A)
3/4 cup vegetable oil
2 tablespoons cinnamon

Directions:
Preheat oven to 350. Mix everything (but the fruit and coconut) together in a large mixing bowl. Spread a thin layer on a couple of baking sheets. Bake, in 15 minute increments, and stir. Add the fruit and coconut after the granola had been baking for 30 minutes. Continue to bake for 15-20 more minutes (for a total baking time of 45-55 minutes), depending on your oven. Granola will continue to "cook" after you take it out. Cool and store in an air-tight container. ENJOY!

Mmmm, Orange Juice Cake

We had our tennis team Christmas Party yesterday and Gail Boswell brought the most yummy cake. For all you chocolate lovers out there, THIS IS NOT FOR YOU! This is for me. Here is the recipe, I can't wait to try it!

Ingredients:
1 box deluxe yellow cake mix
1 box (5 1/4 oz.) instant vanilla pudding
1/2 c. vegetable oil
4 eggs
3/4 c. orange juice
1 tsp. orange extract
GLAZE:
1 1/2 c. confectioners' sugar
1/4 c. orange juice

Directions:
Preheat oven to 350 degrees. Combine all ingredients and mix. Pour into a prepared bundt pan and bake 40-45 minutes. Combine confectioners' sugar and orange juice and pour over cake while cake is still warm.

We are so fortunate - and spoiled! Our wonderful friends and family have given us so many lovely baby gifts. We were even able to buy the nursery furniture with Babies R Us gift cards! We picked up the set yesterday and 2 of the 3 pieces came already assembled! Of course, we looked like the Clampetts driving down the highway with part of the crib box hanging out...but it was worth it not to make yet another trip. The room is nowhere near being done, but it's definitely starting to come together. Over the next few weeks we will be hanging the artwork, cleaning, washing the baby clothes, etc. We're having such fun.

Santa's Whiskers Cookies

I know I've mentioned before what a great cook my Grandmother, Ellen, was. These were her signature Christmas cookies, and I love them. Can't wait to make a big batch this year!

Ingredients:
1 cup butter, softened
1 cup granulated sugar
2 tablespoons milk
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1-cup red candied cherries, finely chopped
1/2 cup pecans, finely chopped
1 cup flaked coconut

In a large mixer bowl beat butter till softened. Add sugar and beat till fluffy. Add milk and vanilla and beat well. Add flour and beat until well mixed. Stir in cherries and pecans. Shape into three 7" rolls. Roll in coconut to coat. Wrap and chill for several hours. Preheat oven to 375F. Cut into 1/4" thick slices. Place on ungreased cookie sheet. Bake about 12 minutes or until done. Remove and cool.

Baby Shower

1. Wrapping paper or gift bags? I wrap. This year, I intend to wrap with all that pretty Sally Foster paper I bought from Corbin last year.

2. Real tree or Artificial? Real, but the cat always gets into it. We're skipping a tree this year :(

3. When do you put up the tree? Usually early Dec

4. When do you take the tree down? A week or two later (because of previously mentioned cat)

5. Do you like eggnog? Yes, but only a tiny bit....a little goes a long way!

6. Favorite gift received as a child? Hmmm.....there have been SO many good ones....a few of my favorites: kitten, guitar, doll house, great clothes! My parents always buy me a pair of pajamas to open and wear on Christmas Eve. I love that tradition, they still do it today

7. Hardest person to buy for? Alvis, my brother in law

8. Easiest person to buy for? My side of the family makes a list of things they would like....so you know they'll always like what they get. Its not as suprising, but no one returns anything! :)

11. Worst Christmas gift you ever received? I one time "cheated" and looked at a couple presents under the tree. When I got down to my last one, I knew what it was....I was so disappointed to NOT have any more suprises. So I learned a lesson to NEVER SPOIL A SUPRISE!

12. Favorite Christmas Movie? "A Year Without A Santa Claus" w/ Snow Miser and Heat Miser!

13. When do you start shopping for Christmas? I start pretty early, but don't finish until the last minute

My parents gave me a nice watch when I was in college, but the small face looks funny on my wide wrist. I've been looking for THE PERFECT watch since then...one that I can wear both day and night. Chocolate Pumpkin Cheesecake Bars

We had family in town this past weekend for a baby shower #2 (yes, there are several). David and I had everyone over for dinner on Saturday night and I made these Chocolate Pumpkin Cheesecake Bars for dessert. They turned out delicious! Granola Roundup {Maple}

I'm still on the granola challenge....trying several recipes before deciding on one to give for Christmas present. My friend, Kristen, gave me this one - Maple Granola from Ann Riley.

Ingredients:
6 c rolled oats, not instant
6oz raw, sliced almonds
1 c raw, chopped pecans
1 c raw pumpkin seeds
1/2 c raw sunflower seeds (couldn't find raw, used roasted)
1/4 c flaxseeds, processed fine
1 tbs salt
3/4 c canola oil
3/4 c maples syrup
2 c dried fruit (I used raisens and cranberries)

Directions:
Preheat oven to 350. Mix all ingredients together except fruit. Spread evenly over a baking pan, lined with parchment paper. Bake 30 minutes or until golden brown, stirring halfway through. Cool completely.

Notes:
Thought it was GOOD. Gave it *** out of 5. Could use some cinnamon maybe?

French Apple Bread Pudding

I spent the eve of my 28th birthday with my dear cousin, Kayla, and her fiancee, Jonathan. They live outside of Orlando and I crashed at her place while playing in a tennis tournament. Well, Kayla and Jonathan REALLY rolled out the red carpet for me. Knowing my love for Italian food, they made homemade garlic bread and spaghetti carbonara. It was delicious! And - as if that wasn't enough - warm "French Apple Bread Pudding" for dessert with caramel sauce and ice cream. They sure know how to treat a pregnant woman!! I begged Kayla for the recipe and I can't wait to make it myself. It was SO DELICIOUS (and, although I'm very afraid of baking new things, very do-able). THANKS KAYLA & JONATHAN!!

FRENCH APPLE BREAD PUDDING

Ingredients:
3 eggs
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
3 medium all-purpose apples, pared, cored and finely chopped
1 3/4 cups hot water
1/4 cup butter or margarine, melted
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
4 cups French bread cubes
1/2 cup raisins (optional) - she used pecans instead

Directions:
Preheat oven to 350 degrees F. In large bowl, beat eggs; add EAGLE BRAND®, apples, water, butter, cinnamon and vanilla. Stir in bread and raisins, moistening completely. Turn into buttered 9-inch square baking pan. Bake 1 hour or until knife inserted near center comes out clean. Cool. Serve warm with ice cream if desired. CARAMEL SAUCE

Ingredients:
1 1/2 cups brown sugar, packed
4 tablespoons flour
1 cup boiling water
dash salt
2 tablespoons butter
2 tablespoons cream
vanilla, to taste

Directions:
Mix sugar with flour in saucepan; blend well. Add water and salt. Stir while cooking for 6 to 8 minutes. If too thick add a little more water. Remove from heat; stir in butter, cream, and vanilla to taste. {I don't know where this recipe comes from}

Twice-Baked New Potatoes

We made these for an appetizer when Cindra came into town a few weeks ago. They were delicious! I used the leftover filling in mushroom caps a few night later and it tasted just as good! Great, easy recipe.

Ingredients:
1.5 lbs small red potatoes
2 tbs vegetable oil
1 c shredded monterey jack cheese
1/2 c sour cream
1 3oz package of cream cheese, softened
1/3 c sliced scallions
1 tsp dried basil
1 minced garlic clove
1/2 tsp salt
1/4 tsp pepper
1/2 lb sliced bacon, cooked and crumbled

Directions:
Rub potatoes with oil and bake, uncovered at 400 degrees for 50 minutes. Cool. Cut potatoes in half, scoop out pulp, leaving a thin shell. Combine potato pulp with other ingredients in a mixing bowl - mash. Stuff potato shells. Broil for 7-8 mins until heated through. {Recipe and photo courtesy of allrecipes.com}

Cheesecake Pops

I saw this article on HWTM blog and LOVE the idea. I haven't made them as of YET but will definitely do so...soon! Instead of making my own cheesecake filling, I plan to buy a cheesecake and THEN make these....so it's not exactly the same recipe, but still.

Ingredients:
Cheesecake
30 lollipop sticks
1 (7 oz.) tub BAKER'S Real Dark Semi-Sweet Dipping Chocolate

Directions:
Roll filling mixture into balls with moistened hands, using about 1 Tbsp. of the filling mixture for each ball. Place in single layer on wax paper-covered baking sheet. Insert lollipop stick into center of each ball. Freeze 2 hours.

Melt dipping chocolate as directed on package. Dip frozen pops into chocolate, turning to coat completely and scraping off excess chocolate on side of tub. Immediately dip balls into reserved Crust Mix and/or desired decorations. Freeze an additional 2 hours or until chocolate is set.

Granola Roundup {Pumpkin Spice}

GRANOLA CHALLENGE: I have that decided that we will be giving our friends home-made granola for Christmas this year. In an effort to practice, we are in the middle of the Granola Challenge. I have 4 granola recipes that I am rating based on taste, ease, and affordability (some granolas cost $20 to make one pan!)...this one is next up!

Ingredients:

3 ½ cups rolled oats
2 ½ cups puffed rice cereal
2 tsp. pumpkin pie spice
¾ tsp. salt
¾ cup brown sugar
½ cup pumpkin puree
¼ cup applesauce
¼ cup maple syrup
1 tsp. vanilla extract
up to 1 ½ cups chopped nuts
up to 1 cup dried fruit

Directions:

Preheat the oven to 325°. Line a large baking sheet with parchment paper. In a large bowl, combine oats and puffed rice cereal. In a medium bowl, whisk together the pumpkin pie spice, salt, sugar, pumpkin puree, applesauce, maple syrup and vanilla extract. Whisk until very smooth. Pour wet ingredients into dry ingredients and stir until the oat mixture is evenly coated. Spread on the prepared baking sheet in an even layer. Bake for 30 minutes. Then turn over the granola using a large, wide spatula. Sprinkle the nuts onto the granola and bake for an additional 15 minutes, until crisp and golden. Depending on the size of your baking sheet, the center may not be fully dried if your granola layer is thick, so if necessary remove the edges of the cooked granola and let the rest cook until done, 10-15 more minutes. Cool on pan or on a fine wire rack. Break up granola as desired and toss with dried fruit. Store in an airtight container. {Recipe courtesy of Annies Eats}

Gram's Space Cake

My Grandmother, Ellen, was a WONDERFUL Southern cook. Kind of reminds me of a skinny, more wrinkled version of Paula Deen (hey, if I can't be honest here, where CAN I be?). She lived in Ocala, FL, and had this GREAT oven/stove from the 1950's. It produced some of the best tasting meals ever (all were heart-healthy, I'm sure). This was my FAVORITE recipe of hers. I asked for it every time she came to town. And she never disappointed...each time it was decorated differently. For Halloween, it had those sugared pumpkins on top. For easter, the marshmallow easter bunnies.

TO MAKE THE CAKE:

2 cups sugar
2 cups all purpose, sifted flour
pinch of salt
1/2 tsp cinnamon
rounded tsp instant coffee

Mix above together.

2 sticks margarine
4 tbs. cocoa powder
1 cup water

Melt together in a saucepan. Pour into dry mixture and add:

2 beaten eggs
1/2 cup buttermilk
1 tsp baking soda
2 tsp vanilla

Grease (PAM) a 13x9" pam. Bake 20-25 mins at 400 degrees.

ICING: start 5 mins before cake is finished.

1 stick margarine
4 tbs cocoa powder
1/3 cup milk
1 tsp instant coffee
pinch of salt
tsp vanilla extract

Bring it to a boil - boil for 1 min. Beat in

one box of 4x confectioner's sugar

Spread it on the cake while cake is warm. ENJOY!

I received one of these questionnaires on email the other day. It's been a long time since I filled one out...so here goes!

1. Fondest NON major-life-event (marriage, engagement, childbirth, etc) memory: Oh I have so many great ones. With my husband, it would be THE GRAND GESTURE: I was training for my job in Dallas on my birthday our first year together. He flew out to Dallas to whisk me away on a DELICIOUS dinner Date (at Lola) and then flew out the next morning to go back to work. It was during the middle of the week and I just knew he had hung the moon!

2. Today is your last day on Earth. Give a detailed description of your IDEAL last meal: I had this roasted mushroom pizza when I was in Italy, and it was the best meal ever. I would have that again. Also with some of my grandmother's "Space Cake" (really chocolate cake with chocolate/coffee frosting).

3. If you HAD to pick something, name one thing you regret doing: There are lots of things I would do differently if I lived my life over again, but don't exactly REGRET. ADONNIS is probably the only regret.

4. Your favoirte flower/plant: Orchids, although they don't stay alive in my house very long. Either I or Honey (the cat) kills it. I also love hydrangeas.

5. Your husband has FOUR HOURS to do anything you want him to. What would be on his "to-do list?" Right now, I would ask him to sweep off the roof, scrub the eaves, and rub/tickle my feet.

6. Where do you see yourself in 5 years? How has your life changed? Honestly, in a similar place to now. Probably same neighborhood, with more (extended) family around. Baby J would be 4 1/2 and there's probably another one (or two) behind him. Hopefully we would have sold our 2 properties and are in 1 big house. Same/similar job situation for both of us.

7. Favorite smell/fragrance? OR, alternatively, smells that make you gag: I love musky scents, REAL lavender, and ginger. Basically anything that normally sells in the Autumn months!

8. Your favorite vacation spot: I think it's going to be Napa Valley. I'll tell you after our trip at the end of the month.

9. Your favorite restaurant in town: I'm going to give a few answers: Biscottis, Mezzaluna, Sun Dog Diner, Moon River.

10. You get $100 and HAVE TO SPEND IT on something out-of-the-ordinary (you can't spend it on groceries or gas) within the week. What do you do with it? If I weren't pregnant, I would say "buy a series of tennis lessons" because there are some shots I don't quite have down yet. But since I AM pregnant, I am giving a selfish answer: I would get a massage @ the PV Spa and spend the entire day in their locker room, rotating from the jacuzzi to the steam room.

11. What's your idea of spring/fall cleaning? Literally taking EVERYTHING out of the house, cleaning it, and putting it back in place. And while everything is OUT, hiring a service to do the insidde. Hopefully throwing out/selling 25% of the stuff we do have.

12. Favorite recipe your family loves? Segerdiner Goulash, Mom's Meat Loaf

13. A time when you held something in.....what would you really like to have said and why didn't you? I really have a hard time thinking of one. I'm pretty outspoken.

14. Your favorite book: NOT "The Memory Keepers Daughter"! Ha ha. Probably "Finding Your Own North Star," by Martha Beck.

15. Your favorite Holiday. What is it and why? I like Halloween (but probably just b/c it is close to my bday). I also REALLY LOVE Thanksgiving, Christmas, & New Years Eve. How can you choose? Oct-Jan is AWESOME.

16. Something on your short-term goal (within the month) list: Start - and finish - our wedding album. Married Jan 2007. Also finish Jonathan's cross-stitch.

17. Something on your long-term goal (within the year) list: Lose baby weight + the 20lbs I put on before getting pregnant. YIKES.

18. Something you said YES to that you wish you wouldn't have: Stewardship committee.

19. Something you said NO to that you wish you wouldn't have: Another thing I have a hard time thinking of.

Chamblin Book Mine

I have only one word to describe this place around the corner from our house: "WOAH!" This place works like a well-oiled machine. I dropped off my laundry basket full of used books and signed in. The guy told me "check back after 10 minutes and we'll be ready to check you out." An hour later (and only 1/3 of the way through the store), I sauntered up to the front desk and made an even exchange!

They have EVERYTHING imaginable there. From now on, I'm going in with a list!! It's too easy to get carried away if you don't have a plan.

Double Chocolate Cookies

Tomorrow is Marsa's bday...and she, like my husband, is a certified chocoholic. I saw these cookies on the Martha Stewart website and had to give it a go! They turned out delicious (I tested one, for quality sake):

Ingredients:
1 cup all-purpose flour
1/2 cup unsweetened Dutch-process cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon coarse salt
1/2 pound good-quality milk chocolate (4 ounces coarsely chopped and 4 ounces cut into 1/4-inch chunks)
1/2 cup (1 stick) unsalted butter
1 1/2 cups sugar
2 large eggs
1 teaspoon pure vanilla extract

Directions:
Preheat oven to 325 degrees. Whisk together flour, cocoa powder, baking soda, and salt; set aside. Melt 4 ounces coarsely chopped chocolate with the butter in a small heatproof bowl set over a pan of simmering water; let cool slightly. Put chocolate mixture, sugar, eggs, and vanilla in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until combined. Reduce speed to low; gradually mix in flour mixture. Fold in chocolate chunks. Using a 1 1/2-inch ice cream scoop {I did this and they turned out 5"!! But they were delicious and still chewy}, drop dough onto parchment-lined baking sheets, spacing 2 inches apart. Bake until cookies are flat and surfaces crack, about 15 minutes (cookies should be soft). Let cool on parchment on wire racks. Cookies can be stored between layers of parchment in airtight containers at room temperature up to 3 days.

Can you even sell used cd's anymore?

I woke up this morning feeling ESPECIALLY tired. Puffy eyes, midly irritated, nasal dryness...ugh! But fortunately, I didn't have any hard appts on the books so I could possibly squeeze in a nap between phone calls and webcasts. But no. Today is apparently LAWN DAY in my neighborhood. Every single person is out doing their yard - blowing, mowing, weeding, edging! It has been going on since 9:30am without a break. Even OUR yard guys came today (normally they come on Thursdays). SILENCE, lawn people! Don't you know I'm trying to take a nap!?!

In less than 24 hours David and I will know if we're having a boy or a girl. More importantly, we'll also know if he/she is healthy. September 11 seemed so far away and now it's right around the corner. I'm feeling nervous, excited, relieved...so many things!! I'm now at a point in the pregnancy when I can feel kicks regularly (and 2 nights ago, I think I felt hiccups in there!). It's a nice little reminder that there's something - make that someone - inside. We're disassembling the guest room to make room for a nursery. We're going to register for furniture, bedding, the necessities this weekend. It's all very exciting! I haven't let myself get too excited....but receiving a clean bill of health tomorrow will give us the "green light." Just praying for a healthy child. {David came home with this sweet idea...bought 2 ties yesterday....blue (boy) and pink (girl) to change into after our ultraound tomorrow. Which will it be?!}

Someone from the blogosphere, Stephanie Nielson, and her husband were in a terrible plane accident a few weeks ago. Although they survived, they are badly burned - up to 80% of Stephanie's body is burned. They have 4 children together (young ones at that). Because the recovery process will be costly, the blog world is celebrating Stephanie today "Nie Nie Day," and DesignMom is hosting auctions. All proceeds go directly to their relief fund. Thought I would browse and ended up biding on this. Hope I win it!

David and I made a delicious dinner tonight...and this one's gonna stay on the dinner cycle. Yum yum! We bought a whole chicken, rubbed it with poultry seasoning, and then roasted it on top of sweet potatoes, carrots, and onions. We had the oven on 350 for 1.5 hours and it was DELICIOUS!! Even better than buying a rotisserie chicken from the grocery store.

I just got my new issue of Everyday Food and there was this recipe for Buttermilk Waffles in it. I'm just now starting to enjoy breakfast food...and I think buttermilk is the quintessential ingredient in any GREAT breakfast recipe. Sent it to my sister in law to try it on her waffle iron. Waiting to hear the reviews!!

Sorry I have been MIA lately, have been a little under the weather with a stomach bug. Yuck! On the subject of being sick, I thought one of these sure would make every headache a little easier to handle. It's a LOT cuter than a bag of frozen peas!!

Is it totally dorky that I'm excited about these? I feel like I'm always soaking and trying to clean my stove burner bowls. Now - a nonstick option!! I've had them for 2 weeks and not ONE stain yet!! I'm VERY happy with this find.

School Time!

One thing I love (and hate if I'm trying to nap) is the marching band practice I can hear from my house. We live right behind a high school and every afternoon at about 3pm you start to hear the cheerleaders chanting and the band practicing. It reminds me that football season is right around the corner. GO NOLES!!!!
